Aval pazham unda (Flattened rice banana fritters)

In this recipe, I tried to combine the taste of aval pazham and pazhampori (both are Kerala’s traditional snacks) by adding few more ingredients and it turned out great too!!

Recipe

In a pan add 1tbsp oil/ghee, cook 2 sliced banana( I used nenthra pazham) for about 5 -7 min until it is well soft and turn off flame. Once it is cooled down slightly, add jaggery syrup(*notes). Add 1/2 cup grated coconut, 1/2 cup flattened rice. Mash and mix everything very well. Make small balls and keep aside.

For batter
1/2 cup maida,1tbsp rice flour/cornflour,1/4tsp turmeric powder,1/2 tsp black sesame seeds and salt.  Mix it by adding water little at a time to prepare smooth thick batter without lumps( consistency should be like idli batter) * Now dip each balls in the batter and deep fry them in medium flame until it turns slightly golden brown.

* For jaggery syrup- In a pan, melt 1/2 cup crushed jaggery and 1/4 cup water. Switch off flame when it reached sticky consistency.
* Sweetness can be adjusted according to taste.
* Jaggery can also be substituted by adding sugar while cooking banana.
* I used kerala flattened brown rice, slightly sprinkled water to make it a bit soft before adding to stuffing.
